Shrimp Waste constitutes proteins, calcium, pigments and lipids, containing a high concentration of polyunsaturated acids, thus there is considerable interest in developing high value product such as shrimp oil. This study was conducted to investigate and asses the influence of the different concentration of solvent on the yield of of] extract in volume, free fatty acid (FFA) as Oleic acid using titration method and the sensory evaluation for its overall acceptability by using a 9-point hedonic method. Using Soxhlet method for extraction, three types of concentrations of hexane were evaluated, treatment I (200 ml), treatment II (300ml), and treatment III (400 ml) consecutively. Overall, the results showed that all treatments has no significant difference (p0.<05) it means that in different volumes of hexane does not affect its yield and to its Free Fatty Acid as Oleic Acid content as well as its organoleptic property to the extracted shrimp oil.
